Miso soup makes for a wonderfully quick, delicious and nourishing meal when you’re feeling under the weather or just in need of something to fill a gap in the day. It can be incredibly simple with just three ingredients, including water, or you can change things up a bit, as I’ve done with this beetroot miso soup.
This vegan cream cheese, pickled beetroot & lettuce sandwich is fabulous for packed lunches. Indeed it’s a good standby for any time you need a quick meal in a hurry. The recipe for vegan cream ‘cheese’ is super simple to prepare and is made with only 3 ingredients (not counting salt and water). It may not yet be #Soupvember, but the days have turned mighty chilly and November is indeed very nearly upon us. This is the time of year when soups and stews come into their own. They’re easy to prepare, nourishing and usually delicious. This sweet potato & carrot soup is not only delicious, but is also colourful, spicy and warming.

As I mostly work from home, I often eat lunch alone. Mostly I have an omelette or something on toast, but occasionally it’s nice to make a bit more of an effort. Not that this Caprese salad bowl with avocado and lettuce is much of an effort. Juicy ripe homegrown tomatoes, mozzarella, basil, avocado, crisp lettuce and some peppery olive oil is pretty much all this salad is, but oh my, it sure has a wow factor and it’s perfect for a light summer lunch or side dish.
There are some really good vegan cookbooks being published these days. What a relief. I remember the days when you were lucky to get a dry as dust burger when you were out. Now there’s all to play for. Award winning vegan street food pioneers David & Charlotte Bailey ‘s book: Fresh Vegan Kitchen, is one of the good ones. Courgette sweetcorn fritters with chilli tomato sauce are just delicious. If you’ve not made sweetcorn fritters before, or if you’ve not tried them with courgette, I urge you to give them a go. They are full of goodness, easy to prepare and make for a nice brunch, lunch or light supper. We enjoyed them last night with the hot tomato sauce and an avocado lettuce salad.

This recipe for an easy Spanish tortilla has less fat and creates less mess than the traditional. It uses very few ingredients and makes a mighty fine summer brunch, lunch or picnic with a crisp green salad. Although it’s made with little more than new potatoes, slow cooked onions and eggs, it’s irresistible.
