Lettuce & Pea Soup with New Potatoes

Lettuce & Pea Soup with new potatoes and croutons.

Dinner, Soup, Spring, Vegan | 23rd April 2019 | By

Spring has arrived with fresh green shoots and an abundance of flowers. Simple, seems suddenly very appealing. This spring lettuce & pea soup with new potatoes is super simple, both in the making and in the eating. The flavours taste fresh and clean. There are only six ingredients involved, seven if you make your own stock from the pea pods, eight if you add croutons. As a bonus, it’s also vegan and fat-free (excluding croutons).

Miso soup makes for a wonderfully quick, delicious and nourishing meal when you’re feeling under the weather or just in need of something to fill a gap in the day. It can be incredibly simple with just three ingredients, including water, or you can change things up a bit, as I’ve done with this beetroot miso soup.

Yes, spring has most definitely sprung. It’s been a long time coming. Apple Parsnip Soup – Fantastic Fruity, Rooty Vegan Fare

Apple Parsnip Soup

Soup, Vacuum Blender, Vegan | 28th January 2018 | By

I do love a bowl of soup in the winter. It’s the perfect comfort food. Warming, nutritious and delicious, it’s a great big hug in a bowl. This vegan apple parsnip soup is one of my favourites. It’s lightly spiced, but the real flavour comes from the sweet aromatic parsnips offset by the slight tartness of the apple.

Nettle Soup – Spring Back Into Vigour With This Cleansing Vegan Tonic

Vegan Nettle Soup

When spring finally emerges, I like to banish lethargy and listlessness and that’s when I start to crave the vitalising, cleansing effect of nettles. I normally have my first bowl of nettle soup in March, but I was a bit late in foraging any from our plot this year. When the day dawned bright and fair on Sunday morning, I was determined to go nettle picking – and I did.

Smoky Mexican Bean Soup with Wholemeal Spelt Soda Bread

Smoky Mexican Bean Soup with Spelt Soda Bread

In cold weather, there is nothing more warming and comforting than a big bowl of steaming soup. Or do I mean stew? I’m not entirely sure whether this Mexican bean soup is actually a soup or stew, but with a generous amount of vegetables, beans and spicy Mexican flavours, it certainly makes for a satisfying meal. It’s especially good when served with some hearty soda bread spiked with a little smoked chilli honey.

Soup is such a wonderful thing. This spiced parsnip spinach soup with apple and turmeric is a quick, delicious and nutritious meal. The sweetness from the parsnips, acidity from the apple and earthiness from the spinach give it a particularly tasty and rounded flavour profile. The additional flavour from the spices makes this an ideal winter warmer.

Cucumber and Celery Smoothie or Summer Soup

Cucumber and Celery Smoothie

A couple of months or so ago, I decided we needed a change from fruity smoothies for our morning breakfast. Delicious as they are, I’m more used to having something savoury at this time in the morning – it just feels right somehow. This cucumber and celery smoothie is so versatile it doubles up as a cooling summer soup.

Summer Green Soup with Parsley and Almond Pesto

Green Summer Soup

Dinner, Leftovers, Soup, Summer | 7th August 2015 | By

A delicious summer green soup using seasonal vegetables and enhanced with parsley and almond pesto. It’s a good one for using up any garden gluts or produce that’s been lurking in the fridge for a bit too long. There’s plenty going on flavour wise and it’s substantial enough to be the main meal of the day.
