Whenever I need to get supper on and I haven’t thought about what we’re going to eat, I inevitably turn to my Pasta’s Last Stand. It’s always delicious, I don’t need any special ingredients, but best of all, I don’t have to think about it. Normally I’d scatter a bit of cheese over the top, but as it’s Veganuary this month, I thought I’d ring the changes and scatter some miso marinated tofu over it instead.
Simple to prepare evening meals are my mainstay, even more so whilst I’m cooking for one. It’s good to have some variation though and this simple laksa noodle soup with tofu, red peppers and green cabbage is a filling and delicious addition to any repertoire. It has the added advantage of being vegan, so it makes a perfect dairy free meal.

We were walking along the North Cornish coast path last weekend when CT spotted a massive patch of rock samphire. We didn’t want to be greedy, but it seemed too good an opportunity to miss, so we picked enough to make a meal out of. This dish of samphire noodles with marinated tofu was the result.
Wild garlic is a forager’s favourite: it’s easy to see, easy to identify and easy to gather. It tastes great too if you’re a garlic lover like I am. The season is quite short, so time is of the essence. This year, for the first time, I made wild garlic pesto. It’s so good and so versatile, I’ve been using it in all sorts of recipes. Another year goes by and another year we are not as organised as we’d like to be down on the plot. We don’t have much in the way of veg to eat at the moment, but we do have a lot of weeds. Luckily for us, many of those weeds are not only edible, but quite delicious when eaten young. Fat hen and chickweed are two of these. Time to make fat hen and chickweed pesto.
Pasta is one of those standbys that is perfect for meals in a hurry. I often make tomato sauce to go with pasta and add carrots and onions and any other vegetables I happen to have around – parsnips work well. The other day, I was in even more of a hurry than usual and so I thought I’d try blending a raw tomato sauce instead. I was a little surprised at just how good this quick tomato sauce with seaweed was.
There is no doubt about it, Italians are proud of their food heritage and they have every right to be so. With its fresh flavours, vibrant colours and simplicity, Italian cuisine ranks as one of the world’s best and is one of my personal favourites. It’s had a massive influence on British food. Where would we be without our pizza, spaghetti Bolognese, lasagne, risotto and more recently the panini? But there is far more to it than these familiar dishes.
