Back off Bugs, carrot tops aren’t just for bunnies. This naturally vegan recipe for carrot top pistou produces a vibrant, fresh and zingy condiment that livens up all sorts of dishes. It’s super quick to make and can be on the table in five minutes.
Yes, carrot jam is a thing. It’s been made in the Middle East since at least the 12th century. In Iran, carrot jam is flavoured with cardamom, rose and sometimes saffron. In this Persian inspired easy carrot jam recipe, I’ve used all three. It’s wonderful eaten just as it is on toast, but it also makes a delicious accompaniment to salty cheese.
It may not yet be #Soupvember, but the days have turned mighty chilly and November is indeed very nearly upon us. This is the time of year when soups and stews come into their own. They’re easy to prepare, nourishing and usually delicious. This sweet potato & carrot soup is not only delicious, but is also colourful, spicy and warming.
Cooking for the Senses by Jennifer Peace Rhind & Gregor Law is a new book published by Singing Dragon exploring vegan neurogastronomy. What’s that, you might ask? Read on and you’ll find out. There’s also a recipe from the book for easy and surprisingly delicious carrot pickles. I made them in almost no time at all. Oh and there’s a giveaway too.
It didn’t feel anything like Spring on the 1st March when the Beast from the East was visiting, but things have calmed down a lot since then. The birds are singing, I’ve seen bees buzzing and daffodils are standing up to attention. As the sap is rising, what could be better than a bit of spring slaw to celebrate the event? Oh, it’s also a nice way to get you on track for a health-giving ten-a-day
Whenever I need to get supper on and I haven’t thought about what we’re going to eat, I inevitably turn to my Pasta’s Last Stand. It’s always delicious, I don’t need any special ingredients, but best of all, I don’t have to think about it. Normally I’d scatter a bit of cheese over the top, but as it’s Veganuary this month, I thought I’d ring the changes and scatter some miso marinated tofu over it instead.
Oh I do love my Froothie blender. It makes such beautifully smooth sauces and has encouraged me to be so much more adventurous than I used to be. Vegan cheese sauce has been on my radar for a couple of years now. Last month, I finally got around to making some. This cheesy cashew nut sauce really is a revelation and I’ll be making it a regular part of my repertoire.
These carrot, cabbage & cheddar mini muffins with garlic scapes are incredibly easy to make and are packed full of vegetables and protein. They’re also very tasty and being bite size are ideal for packed lunches, picnics or parties. They freeze well too.
Kohlrabi is one of those vegetables that’s lurking under the radar. Many people haven’t heard of it at all or if they have, they don’t know what to do with it. We had one delivered in our veg box this week along with a load of new season carrots. Instead of putting it on the veg rack to do something with later, I decided there was no time like the present and made this most delicious kohlrabi carrot slaw.
I thought I ate a lot of fruit and veg, but I’m finding that getting in the newly recommended ten a day is a bit of a challenge. We usually start off our mornings with a smoothie packed full of all sorts of nutritious ingredients. This carrot smoothie with ginger & orange ticks off one of the ten. Only another nine to go then. Juicing could be a good way of adding more fruit and veg to our diet. I’ve stayed clear of juicers, however, as I’ve heard they can be a bit of a faff to clean. But, cue fanfare, this may be a thing of the past with the all singing, all dancing self-cleaning Juisir.
