Summer, isn’t it wonderful? It seems such a long time since we had one. When the temperature rises, my desire for ice cream goes up as well. It seems I’m not alone. Take a look at these 21 cool ice cream recipes. You’ll find some real stunners: the creativity that goes into them never ceases to amaze me.
This coolest of foods has fired my imagination and I’m now particularly keen to try making some with coconut milk. Thank you to everyone for another great We Should Cocoa challenge.

Cool Ice Cream Recipes for Summer
Ice cream pie is a new one on me, but I’m very pleased to be introduced to it. I love the layering effect of this very fast but effective children’s dessert from The After School Cake Tin.
Janice of Farmersgirl Kitchen multi tasked with her entry and enterprisingly used some lime curd to make this fabulous chocolate lime ice-cream. She then trialed a new ice-cream scoop with great success. I still haven’t managed to get a successful scoop, so I shall blame my tools and give Janice full credit for her excellent ice-cream.
Rhubarb and Rose White Chocolate Ice Cream
It’s July, it’s my birth month and it’s summer – yes really. What could be more appropriate to cool, soothe and enjoy in the hot and sunny days to come than the icy velvet of these 21 cool ice cream recipes. Some of you may be sick to death of seeing rose in just about all of my posts at this time of year. Since making rose syrup for the first time in 2012, I can’t get enough of it. I used it to make this no churn rhubarb, rose and white chocolate ice cream.
I don’t know why, but I seem incapable of making a clean scoop of ice-cream. I have two ice-cream scoops, but have not yet produced one single ball of perfection; hacking it out with an ice-pick is more the effect I get.
Rhubarb and white chocolate ice cream was a popular choice this month, ie two of us made it. This version from Johanna of Green Gourmet Giraffe contains white chocolate chips and is beautifully swirled. Johanna is not much of an ice cream fan, but now she has tried this, things might have changed.
As a cheese lover, I was really pleased to see it made an appearance in this cream cheese ice cream with mars bar sauce from Janine of Cake of the Week. Cheesecake in ice cream form, now that is something I have to try.
Something is telling me it must be time to try semifreddo. Chris from Blogging Around the World has come up with a delightful Lavender and Chocolate Semifreddo which was a bit of a herby gamble, but one that happily paid off.
Caroline Makes white chocolate and chilli ice cream and she made it using some dinky little lolly moulds she picked up for a song. Chilli and chocolate is a winning combination for me, so I know I’d be content with one of these in my hand.
A new one on me was this Italian Tartufo from Jill of Lapin d’Or. Made from a Mary Berry recipe these amaretto biscuits soaked in amaretto and encased in ice-cream and chocolate sound heavenly.
Boiling hot commuter rides, don’t sound like much fun, but it seems they do have their plus side. These amazing chocolate ice cream tacos may never have happened without those steamy train journeys. Hannah of Corner Cottage Bakery filled her homemade waffle tacos with a luscious chocolate and Amaretto ice-cream.
Elizabeth of The Law Student’s Cookbook decided to dig out her ice-cream maker for this challenge. I think she must have been pleased she did because as well as making this Ben & Jerry’s mocha chip ice cream she’s made several others this month which sound very tasty too.
More rocky road ice cream from Victoria of A Kick at the Pantry Door. This time with the ingenious technique of freezing it in individual portions using silicone moulds. No fuss and no waiting forever, for the ice-cream to thaw before serving.
As I’ve said before and I’m sure will say again, I am continually astounded by the creativity shown in these challenges, but this green tea and Shetland seaweed ice cream from Elizabeth’s Kitchen is off the scale. Elizabeth, who incidentally is hosting next month’s We Should Cocoa, wasn’t happy with her first attempt, but the second one sounds delicious indeed.
Coconut gets another outing with these coconut ice lollies from Becky of MintCustard. Inspired by bounty bars, these get a big thumbs up from me and have made me feel nostalgic for my childhood when a lolly was an occasional but much loved treat.
Dom of Belleau Kitchen knows how to curry favour; salted caramel is just about one of my favourite things. His chocolate caramel salted popcorn ice-cream is, in his own words, food porn. All I know is I would love to get my hands on a bowl full of this.
Now here’s one to delight the whole family, not just your Valentine. No-churn rich chocolate ice cream (vegan, gluten-free & nut-free) from The Gluten Free Alchemist.
Blueberry White Chocolate Popsicles
Whilst I can’t see myself ever going off chocolate bakes, I’m finding what I most want in this heat is ice cream. Elizabeth’s pretty blueberry & white chocolate ice cream popsicles over at Elizabeth’s Kitchen Diary sound like they’d hit the spot exactly.
Healthy Chocolate-Raspberry Fudgsicles
Avocados are the secret ingredient in these healthy chocolate-raspberry fudgsicles. Don’t let that put you off, Kelly from Food To Glow says they’re a real treat and nobody needs to know what’s in them.
Chocolate Peanut Butter Sundae
Perhaps not the thing for really cold weather, but you can eat this chocolate peanut butter ice cream sundae with relish at pretty much any time of the year. I made to celebrate my Tin and Thyme‘s 9th birthday.
Mint Chocolate Ice Cream Bites
And more luscious chocolates from the Gluten Free Alchemist, only these are frozen ones. The mint chocolate ice cream bites are not only vegan, but they sound delightful.
The Frozen Chocolate Round Up
In January 2015 We Should Cocoa teamed up with Bloggers Scream for Ice Cream (BSFIC) for an icy chocolate extravaganza which is #WeShouldBSFIC. January may not be your favourite time for eating ice cream or other frozen treats, but some of you hardy souls rose to the challenge with enthusiasm.
Chocolate Hazelnut Ice Cream
Apparently we told Elizabeth, over at The Law Student’s Cookbook, that she had to make ice-cream, so she did. I didn’t know we had that much power. Being a fan of all things Nutella, she decided NOT to use it and go for chocolate hazelnut ice cream using roasted hazelnuts instead.
Frozen Crème Fraîche Brownie Custard
Over at Honey and Dough, Hannah has a little doughnut sitting on her shoulder, apparently! Well actually I think I have a little brownie sitting on mine. I suspect it’s not the same brownie Hannah used to make her frozen crème fraîche and brownie custard. I am very excited about the use of crème fraîche, not to mention the brownies of course.
White Chocolate Eton Mess Ice Cream
Janice from Farmersgirl Kitchen has presented her white chocolate Eton mess ice cream in a very stylish cup and saucer, which I am now coveting. I’m rather wishing I could dig into the ice-cream too – made with strawberry purée found in the freezer, it’s a real taste of summer.
Mini Chocolate Ice Pops
I had a go at making mini chocolate ice pops. Well the chocolate may not have looked quite as slick as I’d have liked, but my goodness they were good. Chocolate milk ice covered in thick dark chocolate – I think I’ll have another one.
Violet Crumble Ice Cream
In case you missed it, it was Australia Day last Monday and Johanna over at Green Gourmet Giraffe marked it by making Violet Crumble ice-cream. I’d not heard of Violet Crumble until I read the post. It is not, as I first thought, a crumble pudding flavoured with violet, but an iconic Australian chocolate honeycomb bar.
Chocolate And Passionfruit Baked Alaska
The Big Spud describes his chocolate and passion fruit baked Alaska as a showstopper and he isn’t wrong. The flavours and colour contrasts are just too tempting.
Chocolate Ice Cream
And finally we have Kavey’s very own rich, dense & dark chocolate ice cream over at Kavey Eats. Wow, all I need is the title of this to make me go week at the knees. The ice cream is another no-churn version which I’ve not come across before – it’s all very exciting.
Cherry Chocolate Brownie Ice Cream
No summer collection of chocolate recipes is complete without some ice cream. Luckily Kate at The Gluten Free Alchemist has come up with cherry-chocolate brownie ice cream. I think she’s got all bases covered there 🙂

Sorry I chickened out of this round – one of the few WSCs I’ve missed – but we don’t eat a lot of ice cream and I don’t see the point in making things which people then have to force themselves to eat, or worse still, don’t get eaten at all.
I’ve enjoyed reading the round-up.

I agree that the creativity in this round is astounding – so many great ideas for ice cream – I have tried another ice cream since then which we still have in the freezer to use up some ice cream cones – but I suspect that in summer there may be more ice cream experiments chez GGG
