Cornish Hevva Cake (sometimes known as Heavy Cake)

Cornish Hevva Cake aka Heavy Cake

Despite the unprepossessing name that Cornish Hevva Cake is sometimes given, this lightly fruited bake is not particularly ‘heavy’. It is, however, absolutely delicious. The bake falls somewhere between a sweet scone and a light fruit cake. As with many traditional bakes, Tesen Hevva (its Cornish name) is very easy to make.

Leaving Liskeard – Tribute to a Small Cornish Market Town

Liskeard in Bloom

Capturing Cornwall | 29th August 2017 | By

Much as I love my Cornish home, sometimes opportunities arise that have to be grasped. We are leaving Liskeard and moving to Lymington. This seems an appropriate time to highlight some of the features that Liskeard has to offer and the food venues I will miss.

The Scintillating Isles of Scilly – A Flying Visit – Plane & Simple

Isles of Scilly Airport View

As I peered out of the plane and the Isles of Scilly first came into view, my heart leapt. I fell in love with these beautiful verdant islands bobbing in a scintillating turquoise sea when I first set foot there at the age of twelve. I couldn’t believe it was already five years since my last visit. I’ve said it before and no doubt will say it again, time has a habit of running away with you. This trip was a flying visit, literally.

Rustic Rhubarb Galette With Orange Spelt Flaky Pastry

Rustic Rhubarb Galette Slice

Last Sunday I had a fabulous and much needed day out. I finally managed to take my mother to Caerhays Castle to see the magnolias in full bloom. The display was stunning, but to paraphrase an oriental sage, the heart doesn’t crave flowers for long when the belly lacks calories. Thankfully, when I dropped her off back home, I was treated to a bowl of homemade soup, followed by a good look around the garden and a post-prandial raid on the rhubarb patch. The result is this toothsome rustic rhubarb galette with orange spelt flaky pastry.

Almond and Cardamom Rye Shortbread with Whisky Raspberry Cream

Last week, CT and I were somewhat shocked to find we’d been together for twenty years. How did that happen? To celebrate we both took the day off and went clambering around the Cornish coast. We also called in at the Canteen at Maker Heights. How could we resist the best food in those parts? There, sitting on the counter was a round of almond rye shortbread. Completely intrigued, I had to recreate it.

Honey Apple Cardamom Mini Bundt Cakes and a Cornish Cliff Top Walk

Honey Apple Cardamom Mini Bundt Cakes

These delightful little apple cakes are lightly spiced with cardamom and full of autumnal flavour. They’re made with Mediterranean honey, which gives them an aromatic stickiness to the light sponge. If you only make one apple bake this autumn, make it these honey apple cardamom mini bundt cakes.

Afternoon Tea at The Alverton

Alverton Cakes

Afternoon tea is one of my absolute favourite things. For me, there are few activities that are as indulgent, sociable and relaxing as this very British institution; whether it be a tea party in the house, sitting in a friend’s garden, visiting a café or tea rooms or upping the anti at a luxury hotel such as The Alverton, the only 4 star hotel in Truro.
