Yes, carrot jam is a thing. It’s been made in the Middle East since at least the 12th century. In Iran, carrot jam is flavoured with cardamom, rose and sometimes saffron. In this Persian inspired easy carrot jam recipe, I’ve used all three. It’s wonderful eaten just as it is on toast, but it also makes a delicious accompaniment to salty cheese.

Our local cafe, Olive & Co, does a mean coffee cardamom chocolate cake. It’s more of a torte really as it contains no flour. I’ve been wanting to try making something similar for ages and with the arrival of the new Divine chocolate baking bars, the time seemed right to give it a go. Almond Rye Shortbread with Whisky Raspberry Cream

Recipe for crumbly, chewy almond rye shortbread with a robust but delicious flavour. Unusually, but as the name suggests, this shortbread is made from rye flour and ground almonds. It’s also flavoured with cardamom, although that bit is optional. Tart raspberry cream with whisky compliments it wonderfully well.
