It’s been a good year for tomatoes here in the UK. If you have more than you know what to do with, try making this easy tomato sauce. It captures the taste of summer beautifully and can be squirrelled away to remind us of warmer days when the nights draw in. If you’ve never made tomato sauce from fresh tomatoes before, this recipe is a good place to start. It takes a little time to cook, but the preparation is easy.
Courgette sweetcorn fritters with chilli tomato sauce are just delicious. If you’ve not made sweetcorn fritters before, or if you’ve not tried them with courgette, I urge you to give them a go. They are full of goodness, easy to prepare and make for a nice brunch, lunch or light supper. We enjoyed them last night with the hot tomato sauce and an avocado lettuce salad.
This recipe for a vegetarian version of Syrian stuffed red peppers in tomato sauce is the next in my Flavours of the Middle East series. In some small way, it’s an acknowledgment that there is a lot more to Syria than the dreadful civil war that’s been raging there for far too long. I’m a food blogger, so it’s the delicious Syrian cuisine I’ve chosen to highlight.
I’ve been wanting to create a stand out recipe for veggie meatballs for a very long time. Procrastination rarely pays off and now Heck have beaten me to it. There was nothing for it but to create a super delicious way of serving them. These green veggie meatballs in tomato sauce served as part of a Middle Eastern feast fits the bill beautifully. All vegan and so very tasty.
Bowls of grains topped with vegetables, protein and some sort of dressing are not only healthy but can be flavoursome and deeply comforting. This vegan rice bowl with its smoked tomato sauce is particularly good. It’s especially so when topped with tofu marinaded in a pure maple syrup dressing then fried in coconut oil. If you’re running out of ideas for #Veganuary, this is an excellent one to try.
Pasta is one of those standbys that is perfect for meals in a hurry. I often make tomato sauce to go with pasta and add carrots and onions and any other vegetables I happen to have around – parsnips work well. The other day, I was in even more of a hurry than usual and so I thought I’d try blending a raw tomato sauce instead. I was a little surprised at just how good this quick tomato sauce with seaweed was.
