It’s been a good year for tomatoes here in the UK. If you have more than you know what to do with, try making this easy tomato sauce. It captures the taste of summer beautifully and can be squirrelled away to remind us of warmer days when the nights draw in. If you’ve never made tomato sauce from fresh tomatoes before, this recipe is a good place to start. It takes a little time to cook, but the preparation is easy.

Courgette sweetcorn fritters with chilli tomato sauce are just delicious. If you’ve not made sweetcorn fritters before, or if you’ve not tried them with courgette, I urge you to give them a go. They are full of goodness, easy to prepare and make for a nice brunch, lunch or light supper. We enjoyed them last night with the hot tomato sauce and an avocado lettuce salad.

There was nothing for it but to create a super delicious way of serving them. These green veggie meatballs in tomato sauce served as part of a Middle Eastern feast fits the bill beautifully. Quick Tomato Sauce with Seaweed

Pasta is one of those standbys that is perfect for meals in a hurry. I often make tomato sauce to go with pasta and add carrots and onions and any other vegetables I happen to have around – parsnips work well. The other day, I was in even more of a hurry than usual and so I thought I’d try blending a raw tomato sauce instead. I was a little surprised at just how good this quick tomato sauce with seaweed was.
