Teriyaki Rice Bowl with Tofu & Brussels Sprouts

If you want to make your Brussels sprouts super tasty, this teriyaki rice bowl recipe is the way to do it. In fact, it’s a sure fire winner. It’s quick and easy to make, is packed with protein rich tofu and nutritious Brussels sprouts and made extra delicious with my very own homemade teriyaki sauce. It’s completely dairy-free and a meal I was so impressed with that I made it twice during Veganuary this year.

Tofu Lettuce Tomato Sandwich, a New Vegan Cookbook & a Giveaway

Tofu Lettuce Tomato Sandwich

There are some really good vegan cookbooks being published these days. What a relief. I remember the days when you were lucky to get a dry as dust burger when you were out. Now there’s all to play for. Award winning vegan street food pioneers David & Charlotte Bailey ‘s book: Fresh Vegan Kitchen, is one of the good ones. Their TLT or tofu lettuce tomato sandwich has completely won me over to the wonders of smoked tofu. I have a copy to giveaway for one lucky reader. You’ll find details near the end of the post.

Miso Marinated Tofu with My Pasta’s Last Stand – Vegan & Gluten Free

Miso Marinated Tofu with Pasta's Last Stand

Gluten Free, Pasta, Vegan | 7th January 2018 | By

Whenever I need to get supper on and I haven’t thought about what we’re going to eat, I inevitably turn to my Pasta’s Last Stand. It’s always delicious, I don’t need any special ingredients, but best of all, I don’t have to think about it. Normally I’d scatter a bit of cheese over the top, but as it’s Veganuary this month, I thought I’d ring the changes and scatter some miso marinated tofu over it instead.

Samurai Samphire Noodles with Miso Marinated Tofu

Samphire Noodles

We were walking along the North Cornish coast path last weekend when CT spotted a massive patch of rock samphire. We didn’t want to be greedy, but it seemed too good an opportunity to miss, so we picked enough to make a meal out of. This dish of samphire noodles with marinated tofu was the result.

Tofu Scramble and a Vegan Cookery Workshop

Tofu Scramble

I’ve heard a lot about tofu scramble over the last few months and I have to say, my inner sceptic wasn’t convinced. However, when I found out this vegan breakfast alternative to scrambled eggs was one of the recipes in the Vegan Toolkit Workshop, I thought I really ought to try it. I volunteered to make this particular dish and was of course completely won over.

Vegan Rice Bowl with Maple Tofu and Smoked Tomato Sauce

Vegan Rice Bowl

Bowls of grains topped with vegetables, protein and some sort of dressing are not only healthy but can be flavoursome and deeply comforting. This vegan rice bowl with its smoked tomato sauce is particularly good, especially when topped with tofu marinaded in a pure maple syrup dressing then fried in coconut oil. If you’re running out of ideas for #Veganuary, this is an excellent one to try.

Fasulye with Dukkah Roasted Tofu

Fasulye

Street food in the UK, I’m very glad to say, is on the up and up. Hot dogs and burgers made with cheap and often unhealthy ingredients are making way for fresher and more vibrant fare. With this in mind Cauldron Foods are challenging bloggers to create a street food recipe using one of their vegetarian products. Cauldron Cumberland sausages have long been a favourite of mine, but I am less familiar with their tofu. Sausages, I thought would be too easy, so I opted for the tofu.
