Spring has arrived with fresh green shoots and an abundance of flowers. Simple, seems suddenly very appealing. This spring lettuce & pea soup with new potatoes is super simple, both in the making and in the eating. The flavours taste fresh and clean. There are only six ingredients involved, seven if you make your own stock from the pea pods, eight if you add croutons. As a bonus, it’s also vegan and fat-free (excluding croutons).
Cornish asparagus is up and out and I’m at the ready with my knife and fork and pan of boiling water. Not quite, but I couldn’t resist buying a bunch when I passed our local greengrocer yesterday. Apart from grilling them and eating them for breakfast with scrambled egg on toast, I thought a fresh and simple Cornish asparagus risotto with peas and wild garlic pesto would be just the thing.
It’s been many a year since I set foot in an Iceland shop. I moved back down to Cornwall from Leamington Spa nearly twenty years ago and I certainly haven’t been to one since then. However, when I was challenged to “Go Frozen with Iceland” and create a tasty and nutritious meal, an idea for a green vegetable galette sprang to mind. It was time to track down an Iceland store and see what I could find.
