When summer strawberries are at their best, they deserve more than just cream. This strawberry rose mint fizz turns them into a gloriously refreshing drink , with fresh mint, delicate rose and plenty of sparkle. It's fruity, floral and cooling and makes an easy non-alcoholic drink for summer gatherings, picnics or lazy afternoons in the garden.
Divide between 4 tall glasses or tumblers, then top up with water. Halve the remaining strawberries and add two halves to each glass along with a sprig of mint.

Notes
If you don't have a power blender, use whatever you have to blend the strawberries, mint and rose syrup together. Strain the mixture through a sieve for a smooth purée then mix with ice and sparkling water when you're ready to serve.
Add a slug or two of gin if you feel so inclined.
