This recipe for plum and walnut pizza produces a delicious combination of tart juicy plums, fragrant vanilla and crunchy walnuts. Then there's the pizza dough with it's caramel notes from the baked white chocolate. It's irresistible.

Mix the flours in a large bowl with the yeast, salt and maca powder, if using.
250 g flour, 1 tsp instant yeast, ½ tsp salt, 1 tsp maca powder
Stir in the water and olive oil until the mixture comes together in a ball.
150 ml lukewarm water, 1 tbsp olive oil
Knead for about 10 minutes on an oiled surface. Incorporate the chocolate towards the end, kneading it in as you go.
30 g white chocolate
Place into an oiled bowl and cover with a plastic bag or damp tea towel. Leave in a warm place to rise for an hour or so.
Set the oven to 200℃ (180℃ fan, 400℉, Gas 6).
Divide the dough into 4 balls and roll them as thinly as possible into rounds.
Place on lined baking sheets.
Topping
Warm the jam in a small pan along with the marsala.
3 tbsp plum jam, 1 tbsp marsala
Slice the plums as thinly as you can.
4 large purple plums
Roughly chop the walnuts.
25 g walnuts
Spread a tbsp of the jam mixture over the base of each pizza.
Lay the plum slices over the jam then scatter some walnuts over the top.
Dust each one with a little vanilla sugar.
1 tsp vanilla sugar
Bake in the middle of the oven at for 12 to 15 minutes.
Serve immediately.
Notes
