Yogurt mixed with caramelised onions and chocolate for extra depth and flavour. Simple and quick to prepare, it makes a perfect dip for any occasion or a dish for a Middle Eastern mezze style meal.
100% chocolatea couple of good gratings (I used Willie's Cacao)
½tspsmoked paprika
Instructions
Slice the onion finely and fry very gently in a frying pan over low heat with the olive oil and salt for twenty minutes or so.
Add some finely chopped garlic after about 10 minutes. Stir occasionally and remove from the heat when the onion is caramelised with crispy bits. Allow to cool.
Stir most of the onions (with any remaining oil) into the yogurt together with the paprika and one grating of chocolate.
Scatter the remaining onions over the top together with the second grating of chocolate.
Notes
Feel free to leave out the chocolate element if you wish, but it does give additional depth to the flavour and a note of luxury too. Please note: calories and other nutritional information are per serving. They're approximate and will depend on serving size and exact ingredients used.
