When you're in a hurry or the weather is just too hot, sometimes all you want is a low-effort quick and easy pudding. This is where my super easy strawberries and cream dessert comes in. Perfect for feeding a crowd too.
Roughly crush the digestive biscuits between your fingers and drop them into the bottom of two bowls. Two biscuits per bowl.
Whip the cream along with the rose syrup until you get soft peaks. Stir in the yoghurt. Divide this between the two bowls.
Drop a spoonful of jam over the cream. It's best if the jam is saucy rather than solid, so stir in a little water, lemon juice or rose syrup if necessary.
Pile on the strawberries and tuck in. Add a small sprig of mint if you want it to look even prettier.
Notes
Swap the rose syrup for a tsp of golden caster sugar and ½ tsp rose water or a drop of rose oil. Alternatively use elderflower cordial or vanilla instead.Please note: calories and other nutritional information are per serving. They're approximate and will depend on exact ingredients used.
