Pep up your jar of tomato sauce with some fresh veg for a quick and easy pasta supper. And a little chocolate to give additional umami notes helps too.
200gwholewheat pasta(I used wholegrain kamut tortilli)
250gjar of good quality tomato sauce
5gchocolate100% - grated
20gvegetarian Parmesan type cheese
Instructions
Sauté the carrots, courgettes and garlic in the olive oil for a couple of minutes. Then put the lid on and cook over a low heat for a further 8 minutes or until soft. Stir occassionnaly to prevent the veg sticking or burning.
Meanwhile cook the pasta as per instructions.
Add the tomato sauce to the vegetables and bring to a gentle simmer.
Drain the pasta and divide into two large bowls.
Add the chocolate, stir and pour over the pasta.
Top with some grated cheese and fresh chopped herbs if liked.
