Scrape the coconut milk into a small pan and place over a gentle heat.
400 ml coconut milk
Whisk in the cocoa powder.
2 tsp cocoa powder
Add the chocolate and maple syrup and leave for a minute, then stir.
25 g dark chocolate, 1 tsp maple syrup
Rinse out the coconut milk can with hot water and pour into the pan.
80 ml hot water
Bring to a near simmer, whisking occasionally.
Test for sweetness, then pour into mugs and sip with relish. Top with marshmallows if desired.

Makes 4 x 125ml cups. You could go for 2 x 250ml cups, but it's very rich and a little goes a long way.You can swap the tinned coconut milk for a plant milk, but it won't be nearly as creamy nor as rich.
