Honey Apple Cardamom Mini Bundt Cakes
Delightful little apple cakes lightly spiced with cardamom and full of autumnal flavour. The honey gives an aromatic stickiness to the light sponge.

golden caster sugar
strong flavoured runny honey
1 scant tbsp
I used duck eggs
bicarbonate of soda
1 large or 2 small - peeled, cored and chopped small
Remove the seeds from the cardamom and grind as finely as possible using a pestle and morter.
In a large bowl, cream the butter, sugar and honey along with the cardamom until light and fluffy.
Beat in the eggs, one by one.
Sieve in the dry ingredients and stir until just incorporated.
Stir in the apple and yoghurt.
Spoon into 12 mini bundt moulds or cupcake cases.
Bake at 180C for 15-20 minutes until the cakes are well risen, golden and firm to the touch.
Allow to cool for a few minutes, then turn out onto a wire rack to cool completely.
