This raspberry cream sponge cake is a taste of summer and a highlight of any garden party. It’s a classic victoria sponge, but baked with scented leaves to impart an air of added sophistication and delight. Two sponges are sandwiched together with crushed raspberries and rose flavoured cream. It’s very hard to resist.
This summer has been so hot and dry, we’ve been eating a lot of ice cream. As is often the case, there’s nothing quite so good as homemade. This peach melba ice cream is quite simple to make. It only requires six ingredients and it uses the no churn method. The base is made with peaches and cream and then swirled with fresh raspberry sauce. It’s surprisingly sophisticated, perfect for summer and quite delicious.
When I posted a picture of this Champagne syllabub with orange rhubarb compote over on Instagram I was overwhelmed by the chorus of ” there’s no such thing as leftover Champagne”. Hmmm! CT and I don’t drink a lot and obviously nor do our friends. We had a little bit leftover from a birthday brunch and I’m so glad we did. These little pots of deliciousness are both luxurious and totally sumptuous.
Yes, it’s another flipping pancake post! But Pancake Day is very nearly here and I’m making the most of it. It’s one of my favourite days of the year as it’s a good excuse to indulge. English, Dutch, Scots, American, Breton, sweet, savoury – pancakes of any description are fine by me. Last week I made some savoury pea protein pancakes. Today I give you wholemeal spelt pancakes served with a sophisticated coffee cardamom chocolate sauce.
I make no excuses for posting this indulgent chocolate milk drink. It’s nothing like my salted caramel chocolate milkshake and I’m making no health claims for this one. It’s a rich confection full of chocolate and cream and is purely for pleasure.
