Coffee Brownies with Almond Nut Butter – a Healthier Bake

Coffee Brownies with Almond Nut Butter

There’s no doubt about it, brownies are never going to be super healthy. However, as regular readers will know, they are one of my favourite bakes so I do like to make an attempt to up their nutritional value. These coffee brownies with almond nut butter are similar to my winning healthier brownies with cashew nut butter. They are simple to make and are just as fudgy and delicious as you’d expect a good brownie to be.

Chocolate Banana Cashew Cake

HealthyFry, Large Cakes, Vegan | 19th January 2017 | By

I have a new piece of Froothie equipment to play with. It’s an Optimum HealthyFry – a rapid air fryer that can bake cakes too. Who’d have thought it? With my promise to bring you all things vegan this month, I have created this rich and fudgy chocolate banana cashew cake. Ladies and Gentleman, forget the banoffee, I give you banashew.

Vegan Salted Caramel Sauce

Last week, I made some smoked salted caramel sauce. It was just amazing and I will be bringing you the recipe sometime soon. Sugar and cream, however, are not the healthiest of ingredients, so when I was sent some maca powder recently, I thought I’d try a healthier alternative. This vegan salted caramel sauce is both dairy-free and sugar-free and it’s positively good for you.

Chinese Walnut Cookies

Walnut Cookies

I’d not heard of The Dumpling Sisters until their newly published book passed my way recently. This endearing name for Amy and Julie Zhang highlights their passion for dumplings. It’s a lovely book with recipes for easy homemade Chinese food, but it’s heavily meat orientated, so not really one for me. However, there were a couple of baking recipes in the back which drew my attention and their sweet and salty walnut cookies were one of them.

Berry and Rose Kefir Smoothie

Rose Berry Smoothies

Following on from the success of my Red Berry Smoothie in a Bowl, I thought I’d try a smoothie in a sundae glass and eat it with a spoon. If you are going to eat something with a spoon, it encourages you to sit down – and a sit down breakfast is a rare treat for me.

Red Berry and Coconut Smoothie Bowl

Berry Coconut Smoothie Bowl

As some of you will know, smoothies are a regular breakfast item in the Tin and Thyme household. They are a tasty way of packing in a lot of healthy nutrients and generally keep us going for hours. It was not until I had a conversation with some fellow food bloggers yesterday, however, that I heard about the smoothie bowl. As soon as the concept was explained, I realised that smoothies in a bowl were quite a different thing to smoothies in a glass.

Raw Chocolate Cashew Spread

Raw Chocolate Spread

As some of you may have gathered by now, I’m in thrall to my Froothie high speed blender. It gets used virtually every day and makes a wonderful job of finely blending the most unlikely of ingredients and making them silky smooth. Have a look at my nettle smoothie if you don’t believe me.
