We were walking along the North Cornish coast path last weekend when CT spotted a massive patch of rock samphire. We didn’t want to be greedy, but it seemed too good an opportunity to miss, so we picked enough to make a meal out of. This dish of samphire noodles with marinated tofu was the result.

The season is quite short, so time is of the essence. This year, for the first time, I made wild garlic pesto. It’s so good and so versatile, I’ve been using it in all sorts of recipes. Another year goes by and another year we are not as organised as we’d like to be down on the plot. We don’t have much in the way of veg to eat at the moment, but we do have a lot of weeds. I often make tomato sauce to go with pasta and add carrots and onions and any other vegetables I happen to have around – parsnips work well. The other day, I was in even more of a hurry than usual and so I thought I’d try blending a raw tomato sauce instead.

There is no doubt about it, Italians are proud of their food heritage and they have every right to be so. With its fresh flavours, vibrant colours and simplicity, Italian cuisine ranks as one of the world’s best and is one of my personal favourites. It’s had a massive influence on British food. Where would we be without our pizza, spaghetti Bolognese, lasagne, risotto and more recently the panini? But there is far more to it than these familiar dishes.
