It’s been a while since I did any chocolate making. Homemade chocolates are a great way to say thank you. They also make a delicious gift or can provide an indulgent pick-me-up. These whisky truffles with dark chocolate and fresh cream ticked all of the above.
After Dinner Treats
Shortly before leaving liskeard we were invited to dine with friends. Actually I had a whole round of social engagements, courtesy of well-wishers, but I couldn’t find the time to make something for everyone. In a bid to use up my chocolate supplies whilst at the same time taking along a suitably decadent after dinner treat to accompany coffee, I thought I’d make some whisky truffles.
Whisky Truffles with Dark Chocolate and Fresh Cream
I could have made a whisky ganache and then rolled them in grated chocolate. These would have been delicious enough, but I wanted to make these whisky truffles as scrumptious as I could, so I went all out.
First I made the whisky ganache with Madagascan chocolate, then coated them in Belgian chocolate then finally rolled them in chocolate flakes. Say it with love – your friends are worth it.
Wow, are these good? The whisky truffles are both rich and flavoursome. They provide just enough of a whisky hit to recognise the flavour and alcohol content without feeling as though you’ve been boxed around the ears.
I packed some up for the evening, some went to another friend and I have to confess CT and I might have tried the odd one or two as well. This was strictly for quality control purposes and because we needed some sustenance to deal with all that arduous sorting and packing. That’s my excuse anyway.
Vegan Whisky Truffles
In order to make vegan whisky truffles, use the recipe at the bottom of this post, but swap the dairy cream for coconut cream. The truffles won’t taste the same, but they’ll still be delicious. Just make sure that any chocolate you use is a good quality vegan chocolate.

Whisky Truffles with Dark Chocolate and Fresh Cream – The Recipe
Whisky Truffles with Dark Chocolate and Fresh Cream
Ingredients
- 150 g dark chocolate finely chopped (I used Madagascan 67%)
- 125 g double cream (heavy cream)
- 2 tbsp whisky
- 125 g dark chocolate finely chopped (I used Belgian 60%)
- 50 g dark chocolate flakes
Instructions
- Bring the cream to the boil. Take off the heat and add the first lot of chocolate.
- Leave to melt for a few minutes, then carefully stir from the inside out until the ganache is smooth. Stir in the whisky.
- Place in the fridge for 30 minutes to firm up.
- Roll into small balls, then place back in the fridge for a further 30 minutes to firm up further.
- Melt the second lot of chocolate in a bowl set over hot water. Make sure the bowl doesn’t tough the water and the water doesn’t boil.
- Place the chocolate flakes in a shallow dish.
- Using a fork (a chocolate fork is best), dip the ganache balls into the melted chocolate. Tap the fork on the side of the bowl to remove any excess chocolate. Then roll in the chocolate flakes.
- Place on a metal tray or china plate and leave in a cool place to set.

The key is to coat them with something that hides the chocolate, then it doesn’t need to be tempered.
