As the chocolate heavy months of February, March and April move into the start of summer, there are still chocolate recipes aplenty. In our house, chocolate never goes out of fashion and it looks as though some of you are with me on this. Come have a look and join us if you dare.
It’s May Day and I have many reasons to feel joyful. The sun is shining, it’s my favourite time of the year and I have a whole heap of chocolate biscuit and cookie recipes to share with you all. We’re just back from a couple of days away and despite the copious amount of work that still needs doing to our garden, I really noticed just how pretty it’s looking. Ask for a chocolate biscuit and what do you expect? For me it means a digestive covered in chocolate, but for you it probably means something different. Because there are masses of different chocolate biscuit and cookie recipes out there. Here are a few to be getting on with.
Chocolate Chip Cookies
Chocolate chip cookies are probably the most popular homemade biscuit. This is reflected in the bounty of choc chip cookie recipes we have in this collection. But two choc chip cookies are the same. Take a look if you don’t believe me.
Coffee Choc Chip Cookies
My contribution to our 9 summer chocolate recipes are these coffee chocolate chip cookies with cardamom. They’re made with ethical chocolate flavoured with coffee beans and cardamom, another great combination of flavours. We had a brief drop in temperature so I hot-footed it to the kitchen and braved the oven. I’m glad I did.
Cookies & Cream Cookies

Anzac Day has passed me by once again. Every year I mean to bake up some biscuits. Johanna at Green Gourmet Giraffe was not so remiss – ANZAC biscuits with milo and white chocolate.

Who doesn’t love a bargain? When Hungry Hinny found a bag of Minstrels going cheap, she couldn’t resist using some of them to bake biscuits. Unusually, these Minstrel cookies are made with cream cheese rather than egg – perfect for WSC.

Corina from Searching for Spice gets us back on track with a healthier and very interesting bake – sweet potato and chocolate chip cookies.

And for something a bit different, how about this giant vegan chocolate chip cookie? It’s baked in a small skillet. At its best eaten warm with ice cream. It’s more of a dessert really, but well worth doing.

It doesn’t even matter if you’ve got a bit of yolk mixed up in them. Her chocolate-espresso puddle cookies have a surprise ingredient that makes me want to get baking despite the current heatwave. They’re dairy and gluten-free too.
Chocolate Pistachio Biscotti (Gluten Free)
I also went gluten free with my festive We Should Cocoa bake last month. These chocolate pistachio biscotti with orange and cardamom were delicious.

This chocolate macaroon recipe with honeyed chocolate ganache is the very one I was talking about for using up egg whites. These macaroons are a little different to your average though. They’re made with chufa flour rather than ground almonds. They’re delicious.

What lovely little bites of scrumptiousness these chocolate caramel cups look from Urvashi of Botanical Kitchen. Of course to make them look as pretty as this, you need to be a lot more adept at piping than I am. Maybe I should have attended the London Chocolate Festival where Urvashi was demonstrating these.

Suelle of Mainly Baking can always be relied on to come up with something impressive for We Should Cocoa and this month she gives us rugelach with chocolate and cherries. Not only impressive but sounding absolutely delicious too.

Berry Jaffa Cakes
I am super impressed with Kate’s mixed berry “jaffa’ cakes over at The Gluten Free Alchemist. They look just as they should I reckon, only much much better. The base is made from a sticky rice flour and the jelly is made from Kate’s own autumnal berry jam.
