Homemade Malteser cake is a real crowd pleaser. Just imagine a recipe for a sumptuous malted cake sandwiched with a layer of smooth and delicious malted chocolate ganache and crushed Maltesers. Said cake is then covered in more of the ganache and crushed Maltesers. What’s not to love?

As soon as I saw this cake over at The More Than Occasional Baker, replete with my guilty pleasure, Maltesers, it was only a matter of time before I was going to bake it. Luckily, my birthday provided the perfect excuse. After all the birthday festivities, ahem, back in July, it was time to go back to work. This means I need to take in a birthday cake.
If ever we get boxes of chocolates at work it’s usually the Maltesers that disappear first. I thus reasoned, a Malteser cake would be a popular one for my work colleagues. How right I was.
What Are Maltesers?
Maltesers are a much loved British classic. They’re light honeycomb malted spheres covered in a layer of creamy milk chocolate.
Malteser Cake
The original recipe comes from Annie Rigg’s book Make, Bake & Celebrate. I obviously have a serious gap in my baking book collection. Needless to say, I changed it quite a bit.
Having just read Alida’s post about using vinegar as well as eggs and baking powder, I thought I’d give this a try rather than using buttermilk, which I didn’t have. Because I made a mistake in the amount of sugar I used to begin with, I upped all of the quantities slightly as well as making a few other adjustments.
What I realised as soon as I’d put the cakes together and it was all too late, was that I had forgotten to crush some Maltesers and put them in between the layers. Well what a shame, I was really looking forward to that bit.
Nevertheless, this proved to be the most popular cake yet with my work colleagues. And I have to say I could very easily have demolished a goodly proportion of it myself if I’d had the chance. I had to make do with a modest slice though, which means only one thing – I will have to make this Malteser cake again.
Both the malted cake and malted chocolate ganache are delicious. The cake is pale inside, which contrasts very nicely with the dark chocolate icing.

Malteser Cake
Ingredients
Cake
- 175 g unsalted butter softened
- 75 g golden caster sugar (I used vanilla sugar)
- 75 g dark muscovado sugar
- 1 pinch fine sea or rock salt
- 3 large eggs (I used duck eggs)
- ½ tsp vanilla extract
- 275 g self-raising flour (self-rising flour) (half wholemeal, half white)
- ½ tsp bicarbonate of soda
- 2 tbsp Horlicks
- 100 ml water
- 80 ml milk
- 1 tbsp apple cider vinegar
Malted Chocolate Icing
- 200 ml double cream
- 50 g Horlicks
- 250 g milk chocolate (I used Green & Black's 37%)
- 1 tbsp golden syrup
- 75 g unsalted butter
- 100 g Maltesers
Instructions
Cake
- Cream the butter and sugar together until very light and fluffy.175 g unsalted butter, 75 g golden caster sugar, 75 g dark muscovado sugar
- Add the salt and cream some more.1 pinch fine sea or rock salt
- Beat in the eggs one by one along with the vanilla extract.3 large eggs, ½ tsp vanilla extract
- Sift in the dry ingredients and stir until just mixed.275 g self-raising flour (self-rising flour), ½ tsp bicarbonate of soda, 2 tbsp Horlicks
- Mix the water, milk and vinegar together in a measuring jug, then pour into the cake batter and stir until just combined.100 ml water, 80 ml milk, 1 tbsp apple cider vinegar
- Divid the mixture between two 22 cm round silicone cake moulds or lined tins and bake for 30 minutes.
Malted Chocolate Icing
- Pour the cream into a bowl and suspend it over a pan of hot, but not boiling water.200 ml double cream
- Whisk in the Horlicks, then add the chocolate and leave it to melt.50 g Horlicks, 250 g milk chocolate
- Remove from heat and stir in the golden syrup and butter.1 tbsp golden syrup, 75 g unsalted butter
- Leave to cool and thicken.
- When it's stiff enough to ice (be careful not to let it go too solid), slather a third of the mixture thickly on one cake. Roughly crush 40g of the Maltesers and scatter over the filling.
- Place the other cake on top then cover the top and sides with the remaining icing.
- Decorate with Maltesers around the edge and a few more crushed ones in the middle.100 g Maltesers

I made Annie Rigg’s Easter cupcakes which look like a similar recipe (they contained Horlicks too) and they were divine so the thought of a big version covered in Maltesers…….oh my!
