A moist, spongy and delicious light chocolate yogurt cake topped with chocolate fudge icing. It’s easy to make with an electric whisk and the sponge contains no butter or oil at all. It’s the sort of cake that’s great for casual gatherings and potlucks.
An invitation to a Pizza party is not something we are likely to turn down, but when combined with the pizzas being baked in a pizza oven made by the host’s very own hands, resistance is futile. Indeed this party was a double celebration, a birthday and a christening – if that’s what you call a baptism of fire for a pizza oven.
Homemade Pizza Oven
Dough and toppings were already provided. All we had to do was roll out the dough to the size and shape we wanted and select our preferred toppings from a myriad of choices. As well as the usual range we were also offered wild garlic and steamed nettles. I had to have some of the latter, of course. So I have now eaten my very first nettle pizza.
The oven was fantastic, and although it had to be fired up a couple of times during the evening, it managed to bake well over 40 pizzas. The photograph comes courtesy of the builder herself, Klaudia Vangool.
I really couldn’t turn up empty handed and this party provided the perfect excuse to make – you’ve guessed it – a chocolate yogurt cake.
Chocolate Yoghurt Cake
I’ve used the Greek yogurt in my cakes a few times and am already finding it hard to conceive of not using it in my baking. It gives such a light consistency to the mix as well as keeping the cake nice and moist.
Anyway, having come across a recipe for a butterless cake using crème fraîche at Cake Crumbs and Cooking, I of course thought of trying it with yogurt.
As prolonged whisking of sugar and eggs was an integral part of this recipe, I also got a chance to use my brand new Kenwood hand-mixer, a rather tardy Christmas present from CT.

I made a few adaptations to the original recipe, as I do. Although I mostly use wholemeal spelt flour when baking, this time I went for half wholemeal and half plain white.
I found that the cake rose well then slumped gracefully to just the right level giving a nice flat top to ice. The cake was moist, spongy and delicious. The fudgy icing wasn’t bad either. That’s what I was told anyway. Needless to say, we had a great time and I came home with an empty plate.

Yogurt Cake
- 3 large eggs (I used duck eggs)
- 125 g dark brown sugar (I used muscovado)
- 250 ml Greek yoghurt (I used full fat)
- 115 g flour (half wholemeal, half plain white)
- 1 tsp baking powder
- 30 g cocoa powder
Fudge Icing
- 30 g unsalted butter
- 50 g dark chocolate (I used 70%)
- 1 tbsp golden syrup
- 100 g icing sugar
Instructions
Yogurt Cake
- Whisk the eggs with the sugar until the mixture is thick and well incorporated (about 4 minutes with an electric whisk).3 large eggs, 125 g dark brown sugar
- Stir in the yogurt250 ml Greek yoghurt
- Sift in the flour, baking powder and cocoa powder, then mix together until just incorporated.115 g flour, 1 tsp baking powder, 30 g cocoa powder
- Pour into a round 23 cm (8") silicone cake mould or lined tin and bake for 35 minutes at 200℃ (180℃ fan, 400℉, Gas 6). Test with a skewer to see if the cake is baked. If it comes out more or less clean, it's ready.
- Leave to cool in the tin for ten minutes, then turn out onto a wire rack to cool completely.
Fudge Icing
- Melt the butter with the chocolate and syrup in a small pan over a gentle heat. Stir to combine and remove from the heat.30 g unsalted butter, 50 g dark chocolate, 1 tbsp golden syrup, 100 g icing sugar
- Beat in the icing sugar then mix with enough warm water to make a spreadable, but not runny icing. It will firm up as it cools.
- Spread this over the cake and decorate as you see fit. I used sugar flowers on this occasion.

Mr OC and I have been talking about building our own oven in the garden a la Jamie Oliver for a couple of years now and do you know this summer might just be the summer we do it.
